Tablespoon olive oil                                                                      1

Medium onion, thinly sliced                                                          1

Teaspoon minced garlic                                                                1

Pound sliced mushrooms                                                             1/2

Skinless salmon fillets                                                                4 (4-ounce)

Cup Marsala wine                                                                        1/3

Cups fat-free chicken broth                                                         3/4

Teaspoons cornstarch                                                                  3

The Making

Take the large nonstick skillet (fry pan), heat oil and sliced onion, garlic and mushrooms until tender. Then add salmon to it cook it for 4 minutes then turn onto other side. Meanwhile, in small bowl, mix together wine, broth and cornstarch.

When fish is almost done, add wine mixture to the salmon. Stir gently, as mixture thickens quickly.
